Sibelius' playback of grace notes is often unacceptable. Sibelius plays back all grace notes as acciacaturas: i.e., before the beat and very quickly. I find the only way to get appogiaturas to play back correctly as they would be performed by informed live musicians is to notate them rhythmically as regular notes, possibly with an accent mark. Scores with many grace notes take huge amounts of time to correct by hand. Some grace notes collide with each other or with the parent notes, while other grace notes are ridiculously far away from other grace notes or their parent note.
When slurs are added to grace notes things get even more ridiculous, in some cases it is impossible to manually set the correct position of these slurs.
Often the Arrange feature will place some notes 'out of range' (colored red) in one or more instruments. Presently, we can identify these one at a time by inspection, or with a current plug-in. However it would be ideal if all out of range notes could be identified in a selection. In this way, one could move them all up or down by an octave. I sometimes wished Sibelius would allow me to overfill bars. It should be possible to enable/disable this function.
When entering notes I sometimes need to convert grace-notes afterwards. Otherwise somehow it stops my workflow. This is one thing I enjoyed to have in Finale.
Sometimes it would be reallly useful to be able to flip the direction of one of the end hooks independently (for instance in certain cross staff situations).
When I place a crescendo (hairpin) over a note containing a tie across two measures, the sound volume abruptly drops when playback reaches the second measure. This problem has existed at least since Sibelius 7.0 and continues in Sibelius 7.5. I have encountered it with the flute instrument sample, but not with all instruments.

For grandstaff works requiring extra staves including those with ossia passages the CTRL+SHIFT+UP/DOWN command does not work properly. If the notes have been placed on a stave below the parent staff using this command does not return them to the parent staff but sends them instead to the top staff in the part. Adding an "Audition" feature is something most other Notators have. You keep your mouse on a note and by pressing SHIFT + Mouse click (listen to single current note sustained) or CTRL + Mouse click (ALL the notes running verticle up the score on that note's position sustained. So often I want to copy only the notes AND rests from a bar, but with chord changes, dynamics, text, etc. I can only quickly select the notes. Often that's enough, but there are plenty of times when a phrase begins with a rest that if included in the selection would make pasting much quicker.
When using the term "reggae" as Tempo Text, playback results in notes either being cut off prematurely or not sounded at all, probably due to MIDI overlap. This only happens when two notes are the same pitch, as in bar 6 of the attached file. Removal of the Tempo Text results in normal playback.
